After being sun-dried, Pedro Ximénez grapes are aged for decades in American oak by Bodega Toro Albalá to produce the 1946 Don PX Convento Selección. Originating from Montilla-Moriles, the fortified wine displays a dense, mahogany colour with aromas of raisins and coffee. Its viscous texture leads to a persistent finish of liquorice, making it a suitable pairing for blue cheese or dark chocolate.
