While standard cassis can often be one-dimensionally sweet, this expression focuses on the \"Noir de Bourgogne\" berry—the most aromatic and intense variety of blackcurrant in the world. Unlike the entry-level Giffard \"Cassis d'Anjou,\" the Premium Bourgogne version uses a significantly higher concentration of fruit and a slow maceration process to extract the \"funk\" and vegetal depth of the berries.
